 Here is a recipe for Jalebi ¹ ² ³ ⁴:

Ingredients for the batter:

- 1 cup all-purpose flour

- 2 tablespoons corn flour

- 1/8 teaspoon turmeric

- 1/2 cup curd or plain yogurt

- 1/2 cup water

- 1/2 teaspoon baking soda

- 1 teaspoon lemon juice

- Ghee or oil for frying

Instructions:

- Mix the all-purpose flour, corn flour and turmeric in a bowl.

- Next, add the yogurt and water, making a thick batter.

- Beat the batter well with a whisk in a circular motion for 4 minutes until it becomes smooth.

- Heat the oil in a flat frying pan about one inch deep.

- Pour the Jalebi batter into a piping bag with a small nozzle or an empty ketchup.

- Squeeze the Jalebi batter into the hot oil in spiral shapes about two inches in diameter.

- Fry the Jalebis until light golden-brown on both sides.

- Drain the fried Jalebis in a plate lined with paper towels.

- Start making the sugar syrup.

Ingredients for the sugar syrup:

- 1 cup sugar

- ½ to ¾ cup water

- A pinch of saffron or kesar

- ¼ teaspoon cardamom powder

- 1 teaspoon lemon juice

Instructions:

- Add sugar and water to a pot.

- Boil on a medium heat until it reaches a 1 string consistency.

- Remove from heat and add the cardamom powder, saffron and lemon juice.

- Stir and set aside.

- Add the fried Jalebis into the warm sugar syrup and let them rest for two minutes.

- Serve the Jalebis warm.
