- 2 cups whole milk

- 4 tablespoons organic sugar

- 2 teaspoons corn starch

- 10 to 15 pistachios

- 1 Pinch saffron strands

- ¼ teaspoon cardamom powder

- ¼ cup cream

- 4 chopped pistas


*Equipment:*


- Heavy-bottomed pot

- Kulfi molds

- Ice cream sticks

- Whisk or spoon

- Measuring cups and spoons


*Instructions:*


1. *Boil Milk:*

    - Boil the milk in a heavy-bottomed pot over medium heat.

    - Reduce the heat to low and continue to boil for 10 minutes, stirring occasionally.

2. *Add Sugar and Cornstarch:*

    - Add the sugar and cornstarch mixture to the pot.

    - Continue to boil for another 10 minutes, stirring constantly.

3. *Add Nuts and Spices:*

    - Add the ground nuts, cardamom powder, and cream to the pot.

    - Mix well to combine.

4. *Freeze Kulfi:*

    - Pour the mixture into kulfi molds.

    - Cover with foil and place an ice cream stick in the middle of each mold.

    - Freeze until set, about 4-6 hours.

5. *Serve:*

    - Serve kulfi cold, garnished with chopped pistachios or cardamom powder if desired.
